When I was a child, I did not like cheese (among a number of foods; I used to be a picky eater). That has changed somewhat.
- Vermont white cheddar. Years ago we were on a brief trip in New England and bought some Cabot Crowley white cheddar. It was the beginning of love. We continued to order it by mail on and off for years.
- Sharp cheddar.
- Cojack. Melted atop a bed of corn chips. Mmm, nachos!
- Bleu. I haven't been able to reliably find good bleu cheese around here. Yeah, this is the cheese state and all, but apparently Polk County is anti-bleu cheese.
- String cheese. Nice little snack.
- Feta. Crumbled in a tossed green salad. Cubed in a Greek salad. Feta is a staple in my fridge.
- Pepper jack. Melted on a sandwich, mmm.
There are other delightful cheeses to be consumed on occasion -- mozzarella, provolone, brie, camembert, gouda, edam, etc. -- but I am still not a cheese fanatic.
